Tchinga is the king skewer of Nigerien evenings: pieces of beef marinated in a mixture of spices and groundnut, grilled over a wood fire and served with onions, tomatoes and chilli.

Ingredients

  • 1 kg beef (sirloin or rump)
  • 4 tbsp groundnut powder (kuli-kuli)
  • 1 tbsp ground ginger
  • 2 garlic cloves
  • 1 tsp chilli powder
  • 1 stock cube, salt
  • 3 tbsp oil
  • Onions, tomatoes and lettuce to serve

Method

  1. Cut the meat into thin slices or small cubes.
  2. Mix the groundnut powder, ginger, crushed garlic, chilli, stock cube, salt and oil.
  3. Coat the meat with this mixture and leave to marinate for at least 1 hour.
  4. Thread the pieces onto skewers.
  5. Grill over hot embers for 10 to 15 minutes, turning regularly, then serve with the raw vegetables.
