A simple and popular dish, cooked cowpea beans (wake) are served drizzled with hot onion oil and sprinkled with yaji, Niger's spicy spice blend. They are often accompanied by gari or bread.
Ingredients
- 500 g cowpea beans
- 2 onions
- 10 cl groundnut oil
- 2 tbsp yaji (spicy spice blend)
- 1 stock cube, salt
- Gari or bread to accompany (optional)
Method
- Sort and rinse the beans, then soak for 2 hours.
- Cook in salted water for about 1 hour until tender; drain.
- Heat the oil and brown the sliced onions.
- Serve the hot beans drizzled with the onion oil and sprinkled with yaji.
- Accompany with gari or bread to taste.
